recette de base pour macarons (sans cacao) : ici


- 10g de crĂšme liquide

- 175g de chocolat blanc
- 225g de pĂȘches blanches
- 10g de jus de citron
- 25g d’abricots secs bien moelleux
- 2 pincées de safran
- colorants rouges et jaunes

La ganache pĂȘche-abricots-safran:

1) couper les abricots en petits morceaux et les mixer ; réserver
2) porter la crĂšme Ă  Ă©bullition, retirer du feu et ajouter le safran
3) couvrir et laisser infuser 10 minutes
4) faire fondre le chocolat blanc au bain-marie (sans remuer)
5) peler les pĂȘches, les couper en morceaux et les mixer avec le jus de citron
6) tamiser et faire chauffer la purĂ©e Ă  feu trĂšs doux (il ne faut pas dĂ©passer les 40°)
7) verser la purĂ©e de pĂȘches et la crĂšme au safran sur le chocolat blanc fondu, mĂ©langer jusqu’Ă  obtenir un mĂ©lange homogĂšne
8) incorporer quelques gouttes de colorant rouge puis mettre au frigo

For years consumers have struggled to fit the large round fruit in their refrigerators. And then there was the problem of trying to cut the fruit when it kept rolling around.
