Spicy chicken pasta


INGREDIENTS
2 chicken breasts
1/2 pack of fettuccine
2 bell peppers
1/2 medium-sized red onion
2 cloves of garlic
4 small tomatoes
1 glass of milk
Olive oil for frying
Black pepper according to taste
Red pepper according to taste
Teriyaki sauce
Fresh greens for garnishing

PREPARATION
1. Cut the chicken meat into cubes and sprinkle it with red pepper. Heat up the oil in a skillet and fry the chicken. Put the meat in a bowl.

2. Chop the vegetables and fry them with the same oil for 30 to 40 seconds.

3. Cook the pasta according to the instructions on the packaging. Drain the water, but retain 1 glass of it.

4. Combine the water with the pasta, milk, Teriyaki and black pepper in a pan. Bring the sauce to the boil, stirring. Add the vegetables and mix everything well.

5. Place the pasta in the pan, mix everything and stew for 5 to 7 minutes. Serve the dish garnished with the greens.

Spaghetti with broccoli and red wine


INGREDIENTS
800 g of broccoli
450 g of spaghetti
1 teaspoon of sugar
4 cloves of garlic
1/3 cup of olive oil
1/2 teaspoon of chili pepper flakes
Salt according to taste
Ground black pepper according to taste
1/2 cup of grated Parmesan
750 ml of dry red wine

PREPARATION
1. Cut the broccoli into florets and place them into a pan of boiling salted water to avoid getting a bitter taste. Take the florets out and place them in a large bowl.

2. Bring the water with the broccoli to the boil and cook the spaghetti for 5 minutes, stirring. Then drain the water.

3. Combine the wine and sugar in a large pan and boil for 2 minutes. Add the spaghetti and cook it for 6 minutes until most of the wine evaporates. The pasta should be al dente.

4. Heat up the olive oil in a skillet. Add the chopped garlic and chili pepper flakes. Fry until the garlic turns golden. Then add the broccoli, salt and black pepper and cook everything, stirring, for one minute.

5. Add the spaghetti in the skillet and cook until all the wine evaporates. Turn off the stove, add the cheese, and serve hot.

Pasta bolognese


INGREDIENTS
300 g of spaghetti
1 onion
1 celery stick
1 carrot
Olive oil
200 g of beef mince
200 g of pork mince
1 can of tomatoes in their own juice
3 cloves of garlic

PREPARATION
1.Cut the onion, celery stick and carrot into cubes and fry them with the olive oil until they turn soft. Fry the onion first, then add the celery a minute later, and finally the carrot after two minutes.

2. Stew the mince in its own juice until it turns brown. Almost all the juice should evaporate.

3. Cook the spaghetti in salted water according to the instructions on the packaging. Add the vegetables and canned tomatoes to the meat and simmer everything for 40 to 60 minutes. Then add the garlic.

Pasta with shrimp and tomato-wine sauce



INGREDIENTS
4 tablespoons of olive oil
3 cloves of garlic
4 cups of chopped tomatoes
1 glass of dry white wine
2 tablespoons of butter
Salt and pepper
400 g of spaghetti or any other kind of pasta
400 g of shrimp
1 teaspoon of spices for seafood

PREPARATION
1. Heat up 1 teaspoon of oil in a pan. Add the garlic and fry it for 2 minutes. Then add the wine and tomatoes and stew, stirring, for 30 minutes. When the sauce is done, add salt and pepper according to taste.

2. Cook the pasta in salted water. When it’s done, drain the water and mix the pasta with the butter.

3. Fry the shrimp with the rest of the oil and add the sauce.

4. Mix the pasta with the sauce and serve hot.

Pasta carbonara with zucchini and meat balls


INGREDIENTS
500 g of pork mince
1 onion
4 slices of bacon
500 g of spaghetti
4 egg yolks
2 zucchini
1 cup of cream
1 lemon
120 g of grated Parmesan
1 tuft of parsley
2 tablespoons of butter

PREPARATION
1. Mix together the mince, chopped onion and spices according to your taste. Make small meat balls.

2. Heat up a skillet and melt the butter in it. Fry the meat balls for 5 or 6 minutes. Add the slices of bacon and chopped zucchini. Cook, stirring, for 3 to 4 minutes.

3. Boil the pasta in slightly salted water. Chop the parsley and zest the lemon. Combine the egg yolks, zest, parsley and Parmesan in a bowl to make a sauce.

4. Toss the pasta together with the sauce and add it to the meat balls. Mix everything well and add any spices you like.

Creamy pasta with Pesto


INGREDIENTS
3/4 cups of fresh basil leaves
1/2 cup of grated Parmesan
3 tablespoons of cedar nuts
2 cloves of garlic
Salt
Pepper
1/3 cup of olive oil
1/3 cup of heavy cream
2 tablespoons of butter
340 g of pasta
2 tomatoes

PREPARATION
1. To make pesto, blend the basil, garlic, cedar nuts and parmesan using a blender. Add salt and pepper according to taste. Carefully pour in the olive oil. Mix everything well.

2. Heat up the cream in a small saucepan over a medium heat. Melt the butter in the cream. Then add the Pesto and mix the sauce thoroughly.

3. Boil the pasta in a pan of salted water. Drain the water. Place the paste in a large bowl, pour in the sauce and and toss everything together. Add chopped tomatoes if desired.

Roasted vegetable baked penne


INGREDIENTS
2 red bell peppers
2 zucchini
2 vegetable marrows
Mushrooms
1 onion
1/4 cup of olive oil
1 teaspoon of fine salt
1 teaspoon of ground black pepper
1 tablespoon of herbes de Provence or Italian seasoning
450 g of penne pasta
3 cups of Marinara sauce
1 cup of grated cheese
1/2 cup of grated smoked Mozzarella
1/2 cup of frozen peas
1/4 cup of grated Parmesan for the sauce and 1/3 cup for garnishing
2 tablespoons of butter

PREPARATION
1. Preheat the oven to 230°C. Slice the pepper into stripes and the onion into half-moons. Cut the zucchini and marrows into cubes. Lay the pepper, zucchini, marrows, onion and mushrooms on a baking tray. Add the olive oil and mix together.

2. Add 1/2 teaspoon of salt, 1/2 teaspoon of pepper and herbs and bake for 15 minutes until they get soft.

3. Boil the penne for 6 minutes until it turns al dente. Drain the water.

4. Combine the penne, roasted vegetables, Marinara sauce, cheese, peas, 1/2 teaspoon of salt and 1/2 teaspoon of pepper in a large bowl and mix everything carefully.

5. Place the penne into a baking mold greased with oil. Sprinkle the dish with Parmesan and add the pieces of butter. Bake the pasta until a golden crust appears and the cheese completely melts.

INGREDIENTS
1 onion
1 carrot
3 or 4 cloves of garlic
Olive oil
150g of canned beans
1 liter of water or broth
200g of tomatoes in their own juice
200g of pasta

PREPARATION
1. Cut the carrot, onion, and garlic into small cubes. Fry them with the olive oil.

2. Add the beans, and fry it for 2 minutes. Then add the tomatoes and broth, and mix everything well.

3. Add the pasta and cook it until it turns al dente.

4. Serve with grated cheese and basil if desired.

1/2 cup of butter
1/4 cup of flour
3 glasses of milk
3 glasses of water
1 tablespoon of salt
1/2 teaspoon of black pepper
500g of pasta
2 cups of grated Cheddar cheese
2 cloves of garlic
1 cup of breadcrumbs
2 tablespoons of chopped parsley

PREPARATION
1. Preheat the oven to 240°C. Melt 1/4 cup of the butter in a large pan, then add the flour and fry it for a minute. Add the milk and water. Bring it to a boil, set the lowest temperature and cook the sauce, stirring, for 10 minutes. When it thickens, add salt and pepper.

2. Put the pasta and 1/2 cup of cheese in a baking mold. Pour on the sauce and cover the mold with foil. Bake the pasta for about 20 minutes until it’s done.

3. Melt the rest of the butter in the pan. Add the garlic, breadcrumbs, parsley, salt, and pepper. Mix everything well.

4. Take the foil off the mold. Add the rest of the cheese and breadcrumbs.

5. Bake until the crust turns a golden color.

1. Creamy cauliflower soup

INGREDIENTS
1 kg of cauliflower
2 egg yolks
30 g of white cheese (per 1 serving)
70 g of butter
100 g of cream
200 g of milk
salt and pepper

PREPARATION
1. Wash the cauliflower and cut it into florets. Put them in a pot of salted water and cook for 10 minutes.

2. Take the florets out of the pot and drain the water.

3. Melt the butter in the pot, then add two glasses of cold water. Boil it over medium heat for 5 minutes. Then add the florets and milk, and cook everything for 5 to 7 minutes.

4. Adjust the temperature to the lowest setting. Add the egg yolks and cream to the pot. Make a puree with a blender.

5. Before serving, add white cheese, salt, and pepper to each bowl.

2. Pasta with avocado sauce and shrimp

INGREDIENTS
2 ripe avocados
3/4 cup of spinach
1/4 cup of lime juice
2 tablespoons of olive oil
1 clove of garlic
1 teaspoon of salt
1/4 teaspoon of ground black pepper
370 g of whole wheat pasta
1/2 cup of pasta water
400 g of peeled shrimp
2 tablespoons of chopped cilantro

PREPARATION
1. Combine pieces of avocado, spinach, 2 tablespoons of lime juice, 1 tablespoon of olive oil, garlic, 3/4 teaspoon of salt, and black pepper. Mix until you have a smooth sauce.

2. Cook the pasta. Before draining the water, keep 1/2 cup of the water.

3. Heat up 1 tablespoon of olive oil in a skillet. Add the shrimp, spreading them in one layer, then sprinkle them with salt and fry for 2 minutes. Turn the shrimp over to the other side and cook for one more minute to brown them evenly.

4. Turn off the stove. Add the rest of the lime juice and 2 tablespoons of cilantro, and toss everything together.

5. Place the pasta and avocado sauce in a large bowl. If it is too thick, add 2 tablespoons of pasta water to make it lighter.

6. Top the dish with shrimp and enjoy your meal!

3. Salmon with delicately flavored sauce

INGREDIENTS
2 salmon fillets
1 tablespoon of whole grain mustard
1 tablespoon of Dijon mustard
1 teaspoon of maple syrup
1 teaspoon of purified olive oil
Salt and pepper to taste

PREPARATION
1. Let the salmon come to room temperature.

2. Preheat the oven to 200°С.

3. Line a sheet pan with parchment paper and grease it with oil.

4. Drain the salmon on paper towels and sprinkle with salt and pepper. Then place it skin-down on the sheet.

5. Mix together the mustard, olive oil, and syrup.

6. Coat the salmon with the sauce.

7. Bake the fillets for 10 minutes.

4. Brussels sprouts with honey

INGREDIENTS
10 Brussels sprouts
1 1/2 teaspoons of butter
1 1/2 teaspoons of honey
1/2 teaspoon of mustard
Salt and pepper
A pinch of dried dill

PREPARATION
1. Put the Brussels sprouts in a pot of slightly salted water.

2. Cook them over medium heat for 8 to 10 minutes until they get soft.

3. Mix together the butter, honey, mustard, salt, pepper, and dill.

4. Before serving, pour on the sauce. Bon appetite!

5. Tomato and avocado salad

INGREDIENTS
3 fresh tomatoes
1/2 avocado
1/2 onion
2 tablespoons of lemon juice
2 or 3 tablespoons of seed oil
Salt, pepper, and salad greens

PREPARATION
1. Slice the avocado, or cut it into small cubes. Sprinkle them well with lemon juice and toss. Add the avocado seed to keep the slices from getting brown.

2. Cut the onion into half-moons and put them in boiling water for 2 to 3 minutes. Then drain the water, and let the onion get cool.

3. Slice the tomatoes.

4. Combine the vegetables in a large bowl. Dress the salad with oil, then add salt and pepper to taste. Toss everything and garnish with greens. Do not forget to take the avocado seed out before serving.

6. Potato patties

INGREDIENTS
3 tablespoons of seed oil
450 g of potatoes
Salt and pepper

PREPARATION
1. Peel the potatoes and grate them with a large-hole grater.

2. Drain small portions of grated potato using a cheesecloth.

3. Heat up the oil in a skillet.

4. When it gets hot, spread the potato evenly to make 1 cm-high patties. Sprinkle them with salt and pepper.

5. Fry the patties for 5 to 7 minutes, then turn them over to the other side and fry for the same time.

7. Egg-battered fried zucchini

INGREDIENTS
2 medium-sized zucchini
1/2 cup of flour
2 egg
2 tablespoons of salt
1 or 2 tablespoons of olive oil

PREPARATION
1. Slice the zucchini into 0.5 or 1 cm slices.

2. Wash the eggs and crack them into a bowl. Place flour into another bowl. Add a tablespoon of salt into each one and mix thoroughly.

3. Heat up a pan with oil at medium temperature.

4. Drop each slice of zucchini into the flour first, then into the egg batter, and then place it in the pan.

5. Fry each side of the slices for 3 to 4 minutes until they get golden.
