Chocolate Snowballs

INGREDIENTS 3/4 cup butter, softened 1/2 cup sugar 1/2 teaspoon salt 1 large egg 2 teaspoons vanilla extract 2 cups all-purpose flour 1 cup chopped pecans or walnuts 1 cup (6 ounces) chocolate chips Confectioners' sugar
PREPARATION 1. Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy. Beat in egg and vanilla. Gradually beat in flour. Stir in pecans and chocolate chips.
2. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake 15-20 minutes or until set and bottoms are lightly browned. Cool on pans 2 minutes.
3. Roll warm cookies in confectioners' sugar. Cool completely on wire racks. If desired, reroll cookies in confectioners' sugar. Yield: about 4 dozen.

White Chocolate Cranberry Cookies

INGREDIENTS 1/3 cup butter, softened 1/2 cup packed brown sugar 1/3 cup sugar 1 large egg 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 3/4 cup dried cranberries 1/2 cup white baking chips
PREPARATION 1. In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually add to butter mixture and mix well. Stir in cranberries and chips.
2. Drop by heaping tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 375° for 8-10 minutes or until lightly browned. Cool for 1 minute before removing to wire racks. Yield: 2 dozen.

INGREDIENTS 1/2 cup butter, softened 2/3 cup sugar 1 egg, separated 2 tablespoons milk 1 teaspoon vanilla extract 1 cup all-purpose flour 1/3 cup baking cocoa 1/4 teaspoon salt 1 cup finely chopped walnuts
FILLING: 1/2 cup confectioners' sugar 1 tablespoon butter, softened 2 teaspoons milk 1/4 teaspoon vanilla extract 26 milk chocolate kisses
PREPARATION 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg yolk, milk and vanilla. Combine the flour, cocoa and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until or until easy to handle.
2. In a small bowl, whisk egg white until foamy. Shape dough into 1-in. balls; dip in egg white, then roll in nuts. Place on greased baking sheets. Using a wooden spoon handle, make an indentation in center of each cookie. Bake at 350° for 10-12 minutes or until center is set.

Chocolate profiteroles

INGREDIENTS 1 cup of flour 1 glass of water 100g of butter 3 eggs 300g of dark chocolate 1/2 glass of milk 2 tablespoons of heavy cream A dash of salt
PREPARATION 1. Bring the water to a boil. Add the butter and salt, and turn the heat down to low.
2. Carefully stir in the flour, and simmer the batter until you get a smooth paste. Continue stirring.
3. Put the batter in a bowl, and mix in the eggs one by one.
4. Grease a baking sheet with the butter, and sprinkle it with the flour. Heat the oven to 200°С.
5. Make walnut-sized balls out of the pastry, and lay them on the baking sheet. Bake for 10 minutes at 200°С. Then adjust the temperature to 220°С, and bake for 15 minutes more.
6. Prick your profiteroles with a thin knife to let the steam out.
7. While the profiteroles are cooling down, finely grate 3/4 of the chocolate. Combine the milk and cream, and bring them to a boil. Add the chocolate, and mix thoroughly until it melts completely.
