PREPARATION 1. Peel the vegetables and slice them into thin strips.
2. Boil the noodles in salted water.
3. Stir-fry the sliced onion for a couple of minutes at the highest temperature. Then add the bell pepper strips, and fry the vegetables until they turn tender.
4. Pour on the soy sauce and let the vegetables sit for three or four minutes to soak up the sauce.
5. Toss the noodles together with the vegetables, and sprinkle the dish with grated cheese. Add sesame seeds before serving.

Rigatoni with eggplant and cheese

INGREDIENTS 450g of eggplant 2 1/2 cups of flour Salt Pepper 2 eggs 1/2 glass of milk 1/2 cup of grated Parmesan cheese Olive oil 4 сups of marinara sauce 220g of rigatoni
PREPARATION 1. Cut the eggplant into cubes. Place them in salted water for 15 minutes. Then drain the water and let them dry a little bit.
2. Combine a cup of flour with salt and pepper according to taste. In another bowl, whisk 2 eggs together with the milk. Combine the rest of the flour with the Parmesan in a third bowl.
3. Drop the eggplant cubes into the first mixture, then the second and the third one. Fry them with the olive oil over a medium heat until they turn a golden color. Dry them on paper towels, and combine with the marinara sauce.
4. Cook the pasta following the instructions on the packaging.

PREPARATION 1. Grate the cheese. Cool the egg whites and whisk them together with salt.

INGREDIENTS 1/2 cup of low-fat butter 6 onions (sliced into thin half-moons) 8 or 10 fresh thyme sprigs 1 teaspoon of salt 1 teaspoon of black pepper 1 tablespoon of flour 1 cup of dry white wine 4 cups of beef stock 2 cups of chicken stock 1/2 cup of sliced ciabatta (or any other bread) 3 cups of grated cheese
PREPARATION 1. Melt the butter in a large pan. Add the onion, thyme, salt, and pepper. Cook, stirring, for about 30 minutes until the onion is soft and brown.
2. Add the flour and cook for 1 or 2 minutes more. Pour in the white wine and bring it to a boil, stirring. Add the beef and chicken stocks and simmer the dish for 30 minutes. Season it with salt and pepper.
3. Line a baking sheet with parchment paper and place the cubes of bread on it. Toast them for 3 to 5 minutes until they get crunchy.

INGREDIENTS 1/2 cup of butter 1/4 cup of flour 3 glasses of milk 3 glasses of water 1 tablespoon of salt 1/2 teaspoon of black pepper 500g of pasta 2 cups of grated Cheddar cheese 2 cloves of garlic 1 cup of breadcrumbs 2 tablespoons of chopped parsley
PREPARATION 1. Preheat the oven to 240°C. Melt 1/4 cup of the butter in a large pan, then add the flour and fry it for a minute. Add the milk and water. Bring it to a boil, set the lowest temperature and cook the sauce, stirring, for 10 minutes. When it thickens, add salt and pepper.
2. Put the pasta and 1/2 cup of cheese in a baking mold. Pour on the sauce and cover the mold with foil. Bake the pasta for about 20 minutes until it’s done.
3. Melt the rest of the butter in the pan. Add the garlic, breadcrumbs, parsley, salt, and pepper. Mix everything well.
4. Take the foil off the mold. Add the rest of the cheese and breadcrumbs.

PREPARATION 1. Grab a skillet where you can place the tortilla. Melt 1/2 tablespoon of butter in the skillet.
2. Fry one side of the tortilla, and then take it off the stove.
3. Place the rest of the butter in the skillet, and fry the other tortilla.
4. Place the cheese on the tortilla and cover it with the other tortilla. Press it with your fingers to melt the cheese.
5. Cut the quesadilla into triangles.
6. Pour on the salsa and/or sour cream.

PREPARATION 1. Wash and peel the squashes. Finely grate them.
2. Separate the egg whites from their yolks. Whisk the egg whites to create stiff peaks.
3. Combine the egg yolks with the grated cheese. Retain some cheese for the topping.
4. Combine the squashes with the cream, cheese, flour, salt, and pepper. Carefully add the whisked whites and mix from the bottom upwards.
5. Put the batter into molds, and sprinkle them with the cheese. Bake the souffles for 20 to 30 minutes at 180°C. It’s better to serve them hot.

Risotto and cheese arancini

INGREDIENTS 400g of risotto 50g of Mozzarella (you will need the cheese in a bar, not balls) 1 egg 50g of breadcrumbs 300ml of oil for frying
PREPARATION 1. Cut the Mozzarella into small cubes.
2. Whisk the egg.
3. Grab a bit of risotto and make it into a flat sheet on your palm. Put a piece of cheese in the middle and make a ball. It will be easy, because risotto is quite sticky.
4. Put the formed balls on a plate.
5. Heat up the oil in a pan. The oil should cover half of a ball. To check if the oil is hot, drop some water in it — the oil should sizzle immediately (be careful!).
6. Drop the balls into the egg batter and coat them in the breadcrumbs. Then put them in the oil immediately. Turn the balls over with a skimmer — they should fry evenly.
7. Place the balls on paper towels to drain the extra oil.

PREPARATION 1. Sprinkle the fish with the juice from a lemon and the spices. Put it in the fridge for 20 to 40 minutes.
2. Whisk the eggs and add the finely grated cheese.
3. Coat the fillets in the flour and then the cheese batter
4. Fry each side of the fish with butter for 5 to 7 minutes.

Crispy cheese potatoes

INGREDIENTS  washed potatoes 230g of grated cheese 500g of sliced bacon Olive oil Salt and pepper Sour cream and spring onion for serving
PREPARATION 1. Preheat the oven to 240°C.
2. Pierce the potatoes with a fork many times. Sprinkle them generously with salt and pepper.
3. Place the potatoes on a baking sheet and bake until the peel is crispy. Let them cool down.
4. Cut the potatoes into halves. Take the flesh out with a spoon — there should be about 0.5 inch in thickness left. Sprinkle the halves with the olive oil on both sides and bake for 5 to 7 minutes more. The potatoes should turn a golden color inside.
5. Place the cheese and bacon into the halves and put them in the oven for 2 minutes, until the cheese melts. Serve the dish with the sour cream and chopped onion.

PREPARATION 1. Cut the cheese into 8 strips.
2. Coat them in the flour, then shake off the extra flour.
3. Drop each piece in a bowl of whisked egg, and coat them in the breadcrumbs.
4. Heat up a frying pan or a pot, then add seed oil (it should cover the sticks completely).
5. Fry each side of the stick for about a minute until a golden crust appears.
6. Dry the sticks on paper towels. Serve with marinara sauce.
