INGREDIENTS 200g of rice noodles 300g of chicken fillets 1 eggplant 1 zucchini 1 onion 4 or 5 tablespoons of soy sauce 2 tablespoons of oyster sauce 1 tuft of spring onion Salt and pepper
PREPARATION 1. Peel all the vegetables and cut them into thin strips. Cut the chicken into strips too.
2. Boil the rice noodles.
3. Stir-fry the chicken over a high heat for three or four minutes. Then add the onion and fry for two to three minutes more. Add the vegetables and cook them, stirring, until they get tender.
4. Add the sauces, and mix everything thoroughly.
5. Mix the noodles together with the chicken and vegetables.
6. Serve hot with chopped spring onion.

Rigatoni with eggplant and cheese

INGREDIENTS 450g of eggplant 2 1/2 cups of flour Salt Pepper 2 eggs 1/2 glass of milk 1/2 cup of grated Parmesan cheese Olive oil 4 сups of marinara sauce 220g of rigatoni
PREPARATION 1. Cut the eggplant into cubes. Place them in salted water for 15 minutes. Then drain the water and let them dry a little bit.
2. Combine a cup of flour with salt and pepper according to taste. In another bowl, whisk 2 eggs together with the milk. Combine the rest of the flour with the Parmesan in a third bowl.
3. Drop the eggplant cubes into the first mixture, then the second and the third one. Fry them with the olive oil over a medium heat until they turn a golden color. Dry them on paper towels, and combine with the marinara sauce.
4. Cook the pasta following the instructions on the packaging.
5. Add the sauce to the pasta.

INGREDIENTS 3-4 medium-sized eggplants 4 tomatoes 150 g of hard cheese 3-4 cloves of garlic Salt and pepper to taste
PREPARATION 1. Wash the eggplants and slice them into 1 cm slices.
2. Sprinkle the slices with salt. Place them in a colander and let them drain for 30 minutes to avoid getting a bitter taste.
3. Rinse the eggplants in cold water and drain them on paper towels.
4. Slice the tomatoes into circles.
5. Chop the garlic or crush it using a press.
6. Grate the hard cheese with a fine grater.
7. Lay the eggplants on a baking tray.
8. Place a bit of garlic and a circle of tomato on the top of each slice of eggplant.
9. Sprinkle the eggplants with salt and pepper.
10. Cover each slice with cheese and place the tray in the oven.
11. Bake for 30-35 minutes at 170-180 °C.
